TRAK Employment Solutions, acting as an employment business, are working in partnership with a well respected and established business in the Cotswold. Our client has an opening for an experienced Food and Beverage Manager to join their hospitality team.

This is a management role that is predominantly floor-based with scheduled management time, with the responsibility for the smooth and effective operation of all F&B service (functions, bar, patio and halfway house).

You will ensure the highest standards of customer care and service levels are implemented at all times. Training and developing the team alongside the continual improvement of department business to maximise sales opportunities while working towards goals and financial targets set by the General Manager.

Main Objectives & Responsibilities:

  • Ensure shifts are adequately staffed and run efficiently, providing outstanding customer service, supervising staff while maintaining a calm and professional environment at all times.
  • Work to ensure that the highest level of profitability and ensure you and your team is proactive in generating business and casual revenues.
  • Ensure that the food and beverage cost levels are monitored and controlled in line with budgeted targets.
  • Operating the department in line with payroll budgets (front of house and kitchen), paying close attention to seasonal requirements. Record and monitoring of hours worked and supplied reports/timesheets to be provided to the General Manager on a weekly basis, along with a detailed payroll forecast for the upcoming period.
  • To deliver the company products and departmental service standards in line with the company guidelines. Ensuring high standards and continually meeting all aspects of the department and thus meeting, whilst aiming to exceed customer expectations at every opportunity.
  • Ensure that monthly budgeted and forecasted revenues and expenses are achieved. If for any reason these aren’t achieved, a detailed report outlining actions taken to be communicated with the General Manager.
  • Manage and control all banking and cash handling for the department.
  • Become the main point of contact for staff, members and guests for any issues relating to the running of the bar catering, and function/events activities.
  • Keep an inventory of all department equipment and ensure adequate levels are maintained – paying attention to costs and expenses.
  • Fully responsible for the Bar cellar regarding ordering, stock rotation, general cleanliness, line cleaning, and barrel changes.
  • Management and control of the profit and loss account for the food and beverage operation, with particular attention on GP levels across wet and dry lines.
  • Deal effectively with complaints and comments from guests and communicate these issues as necessary. Record and utilise feedback to its full potential.
  • To be fully aware and manage all Health and Safety, Food Hygiene, Fire and Emergency procedures, including weekly and monthly site audits and checks for the clubhouse operation including kitchen fridge checks.
  • Follow up on any reports of accidents or incidents in any area of the department.
